Laab, or spicy minced pork salad, is a delicious North Eastern Thai speciality. The tastiest laab are usually prepared by North Easterners. Asking the chef for his recipe or secret, however, is difficult due to the language barrier (North Eastern Thais speak a distinctly different dialect to Bangkokians).
